Matcha tea

Matcha – is a very finely ground green tea powder, made from specially grown and processed finest quality tea leaves. Matcha is a ritual tea, traditionally used in Japanese tea ceremony. Growing and processing matcha is a special process that requires a lot of time, knowledge and dedication. Tea bushes are grown under shade for 4 weeks prior harvest – that influences the deep green color and sweet umami taste matcha is praised for. After harvesting and processing, leaves are finely ground using special stone mills. That is a slow process – to ensure the highest quality of matcha, the stone mills are set to grind without the raise of temperature between the stones, which would affect the quality, therefore only 30-40 grams of matcha per hour are produced.
