Matcha tea

Matcha – is a very finely ground green tea powder made from specially grown and processed finest quality tea leaves. Matcha is a ritual tea traditionally used in a Japanese tea ceremony. Growing and processing matcha is a special process that requires a lot of time, knowledge, and dedication. Tea bushes are grown under shade four weeks before harvest, which influences the deep green color, and sweet umami taste matcha is praised for. After harvesting and processing, leaves are finely ground using special stone mills. That is a slow process – to ensure the highest quality of matcha, the stone mills are set to grind without raising temperature between the stones, which would affect the quality. Therefore only 30-40 grams of matcha per hour are produced.
